    The Copenhagen Market cabbage, also known as Danish Ballhead Cabbage, is a popular variety that originates from Denmark. It belongs to the Brassica oleracea family, which includes other cabbage varieties, broccoli, and cauliflower. This heirloom vegetable produces large, round heads with blue-green leaves that are rich in nutrients and delicious both raw and cooked. The heads typically measure 6 to 8 inches (15-20 cm.) in diameter and can weigh up to 8 pounds (4 kg.). The dense interior leaves have a creamy, greenish-white color.

     

    Growing Tips

    Start seeds indoors in flats at least eight weeks before planting out, as Copenhagen Market cabbage doesn’t tolerate high temperatures. Plant seedlings four weeks before the last expected frost. For a fall crop, consider direct sowing or setting transplants in midsummer. Transplants should be spaced 12 to 18 inches (31-46 cm.) apart in rows 4 feet (1 m.) apart. If directly sowing seeds, thin the plants to the necessary distance.

    Mulch around the young plants to keep the soil cool and conserve moisture. If a hard frost is expected, cover the plants to protect them. Harvest the heads when they are firm and before hot summer temperatures arrive.

     

    Companion Planting

    To protect young plants from pests, consider companion planting with herbs that repel insects. Avoid planting cabbage near tomatoes or pole beans. Be aware that heirloom varieties like Copenhagen Market are susceptible to diseases like yellows caused by Fusarium fungus, unlike modern resistant varieties.
